These High-Protein Air Fryer Egg Bites are a quick, flavorful, and nutritious breakfast or snack. Made with egg whites, whole eggs, and fresh vegetables, they’re easy to prep, easy to store, and perfect for meal prep.


Ingredients

3 large eggs

1/2 cup egg whites

1 cup chopped spinach

1/2 medium red bell pepper, finely diced

3 tablespoons almond milk (vanilla unsweetened)

1/4 cup fat-free feta cheese

1/4 teaspoon salt (or to taste)


Instructions

1. Preheat air fryer to 300°F (150°C).

2. Whisk together eggs and egg whites in a mixing bowl.

3. Add chopped spinach, red bell pepper, almond milk, and salt. Mix well.

4. Divide mixture among 8 silicone muffin cups, filling each about 3/4 full.

5. Top each with a sprinkle of fat-free feta cheese.

6. Gently place the filled muffin cups into the air fryer basket.

7. Air fry for 8–10 minutes until firm and lightly golden.

8. Let cool before removing from silicone cups.

Notes

Pat vegetables dry to avoid soggy bites.
