Description
These air fryer egg bites are quick, protein-packed, and customizable. Made in just minutes, they’re perfect for busy mornings or meal prep.
Ingredients
7 large eggs
1/4 cup shredded cheddar cheese
¼ cup cottage cheese
3 tbsp milk of choice
¼ tsp salt
¼ tsp pepper
1/2 cup chopped fajita veggies
Instructions
1. Preheat air fryer to 340°F.
2. Add eggs, cheddar cheese, cottage cheese, milk, salt, and pepper to a blender. Blend for 30 seconds.
3. Place silicone molds in air fryer. Pour egg mixture into molds.
4. Evenly divide veggies among molds (~1 tbsp per mold). Sprinkle cheese on top.
5. Air fry for 5 minutes. Stir. Continue cooking 8 more minutes until just set.
6. Let rest for 5 minutes. Serve or store.
Notes
Store in fridge for up to 5 days or freeze for 3 months.
Reheat in microwave or air fryer.
Customize with other cheeses, proteins, or herbs.
