Description
Quick, protein-packed air fryer egg bites made with cottage cheese, turkey bacon, and Swiss cheese. Perfect for meal prep or a nourishing breakfast on the go.
Ingredients
- 3 large eggs
- 1/2 cup 2% cottage cheese
- 1/4 cup cooked (crumbled turkey bacon)
- 1/4 cup shredded Swiss cheese
- 2 tbsp chopped green onion
- 1/8 tsp kosher salt
- 1/8 tsp black pepper
Instructions
1. Blend eggs, cottage cheese, salt, and pepper until smooth.
2. Distribute turkey bacon, cheese, and onions into silicone muffin cups.
3. Pour egg mixture over the fillings, filling each cup 3/4 full.
4. Place cups in air fryer basket with space in between.
5. Cook at 280°F for 13–15 minutes until puffed and golden.
6. Let rest in the air fryer for 3–5 minutes before removing.
Notes
Store in an airtight container in fridge up to 4 days or freeze for up to 2 months.
Reheat in microwave for 30 seconds or in air fryer at 300°F for 3–4 minutes.
