Description

Crispy, golden accordion potatoes with garlic-herb butter, perfect as a side or snack—oven or air fryer friendly.


Ingredients

4 large potatoes preferably Yukon Gold or Russet

1/4 cup vegan butter

1/2 tsp thyme dried

1/2 tsp oregano dried

2 cloves garlic minced

1/2 tsp sea salt

1/2 tsp pepper

1 tbsp fresh parsley chopped


Instructions

1. Peel the potatoes and trim round edges to square off.

2. Slice into 1 cm (0.4 in) thick pieces.

3. Place slices between two wooden skewers and cut vertical lines.

4. Flip and cut diagonal lines to create the accordion effect.

5. Thread each slice onto skewers and soak in cold water for 30 minutes.

6. Melt butter and stir in garlic, thyme, oregano, salt, and pepper.

7. Brush both sides of each potato with the herbed butter.

8. Bake at 425°F for 30–40 minutes, flipping halfway, until crisp and golden.

9. Garnish with fresh parsley and serve hot with dipping sauce.
