Soft, naturally sweet cookies made with just oats, eggs, and dates. Perfect for quick, healthy snacking.
Ingredients
2 ¼ cups 225 g rolled oats
4 eggs (2 whole + 2 yolks)
1 ⅛ cups 200 g pitted Medjool dates
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment.
- Crack 2 whole eggs into a bowl. Separate 2 more eggs, adding only the yolks.
- Grind ¾ cup of oats into oat flour and mix with remaining oats.
- Blend dates with eggs and yolks until smooth.
- Stir blended mixture into oats to form a thick dough.
- Scoop dough onto baking sheet, spacing about 1½ inches apart.
- Flatten each with wet fingers to ¼-inch thick.
- Bake for 8 minutes until tops are set but not shiny.
- Cool on sheet 5 minutes, then transfer to rack to cool completely.
Notes
For a vegan version, substitute the eggs with 2 mashed ripe bananas.
Store in an airtight container for up to 4 days.
Optional add-ins: cinnamon, chocolate chips, chopped nuts.
